The fresh truffle is a delicate and highly perishable mushroom, so it’s best enjoyed within a few days of receiving it to savour its full flavour. To keep it fresh, here are some simple tips: once you get it, remove it from its transport packaging and store it in a kitchen container. Wrap each truffle gently in cotton or paper towels, and be sure to change the napkins daily. Keep the truffle in the fridge at around +2°C to +4°C, making sure it’s stored in a container that allows it to breathe—avoiding airtight seals. Just a heads-up: keep it away from dairy, eggs, and meat nearby, as they will absorb the truffle aroma. Though it’s not a bad idea to enjoy eggs with that lovely truffle aroma and flavour—feel free to decide for yourself!

When the truffle starts to feel a little rubbery to the touch, that’s a good sign it’s at its best—so make sure to savour it right away!
