These Pasta Martelli spaghettini are made from premium durum wheat flour, sourced exclusively from Italian wheat and lovingly milled by Molino Bolgiali just outside Florence. The dough is expertly kneaded by the Martelli family with cold water, extruded using traditional bronze dies, and then gently dried at 33°-36° for an ideal 50-hour finish. Each batch is packed in charming traditional yellow paper packets.
