SALINE DI CERVIA

Salt has been an integral part of Cervia’s history for centuries. Even today, it beautifully influences the daily life of the local people and is reflected in the charming architecture of the area.

Unlike common table salt, which often undergoes extensive treatments like drying, refining, bleaching, grinding, and includes anti-caking agents, the salt from Cervia Saltpans is harvested using traditional methods with minimal processing. It’s not artificially dried like many other salts and retains its natural 2% humidity. This helps preserve all the beneficial elements naturally found in sea water, such as iodine, zinc, copper, manganese, iron, magnesium, and potassium, keeping them intact in the salt.

Cervia’s salt, often called “sweet salt,” is appreciated for its low content of “bitter salts” like magnesium sulfate, calcium, and potassium, which results in a pleasantly clean taste on the palate. The Saline di Cervia has been producing salt for centuries and today is part of a protected natural reserve, home to a diverse array of birds and plants, making it a special place of both cultural heritage and natural beauty.
