COLATURA DI ALICI FROM CETARA

The Colatura di Alici from Cetara, on the beautiful Amalfi Coast, prepared by Colimena, is a lovely amber-colored liquid made by preserving anchovies in wooden barrels with water and salt, just like the traditional way. After aging nicely, the anchovies release a flavourful liquid that’s the perfect, pure ingredient of this well-loved colatura.
